Fun Things To Do In Antigua

Have you heard of Antigua and Barbuda? Not Antigua in Guatemala. When I told people I was visiting Antigua, 99% of them have never heard of the country. It’s 324 miles from Puerto Rico. East of US Virgin Islands and North of Barbados. Here it is on the map:   If you are wanting to avoid the resort route, I’d advise you don’t. The resorts offer a lot of things to do and you don’t have to worry about transportation or food, like I did. I will admit that if I stayed an additional 3 days or more, I would have trouble finding enough things to do within Antigua. Antigua has a…

Why Southern Africa Is Worth Visiting

There is nowhere like Africa. It is a continent (NOT a country) that encompasses a wide variety of cultures, ecosystems, languages, and religions. Although Africa continues to be exploited by foreign interests, it has the potential to be great. #WakandaForever   Countries visited: South Africa, Mozambique, Swaziland, Lesotho* Total time spent: 5 weeks *Lesotho is only mentioned once in this post because I was there for 3 hours  This trip was not my first time on the continent. Nigeria is the only African nation I am familiar with. Lived there for 2.5 years at age 7 and was last there in 2015. I quickly realized that Nigeria isn’t like South…

    Review: Cooking Lesson in Italy

Disclaimer: All opinions expressed are my own. This was self-sponsored and not sponsored by anyone.  Maybe it’s just me, but I noticed how oversaturated the cooking lesson business in Italy is. Too many to choose from! And the cuisine varies from region to region. Sapori e Saperi, in my opinion, was worth every nickel and dime. (Lesson was done in May 2017.) Our chef’s name was Gabriella. She is Italian and has lived all her life in Italy. Location: Near Viareggio in the Tuscany region Duration: About 6 hours Start time: 9 AM We first met up at the pier. Spent approximately 20 minutes there. Gabrielle brought some freshly caught seafood…

And don’t forget that the weather is great almost all year round. My time was limited, so below is a four day overview of my trip during the month of January.   TRIP HIGHLIGHTS   San Ignacio 1) Horseback Riding Tour to Xunantunich Rode on the horse through the farm and jungle for an hour at a slow pace. Our guide pointed out fruits, birds, and medicinal plants along the way. The weather was perfect and I felt so tranquil! I don’t know…

Part II: 25 Foods You Should Try In Europe

NOTE: If you missed part one, click here. I traveled to the 8 countries, so this post will not cover all of Europe. Are you a foodie? Do you love fresh food? Do you love desserts? …..If you answered yes to any, well, this is a great post for YOU! Of course there are many things you could try, but here are my favorites. And when I say ‘favorite’, I mean I enjoyed it so much that I would like to replicate it in my kitchen.   DENMARK While I was in Copenhagen for a 7-hour layover, I stopped by Papirøen, which is a warehouse filled with street food vendors serving a variety…
