Ingredients
  • 1.5 cups homemade almond flour (355 mL)
  • 6 eggs
  • 2/3 cups turbinado sugar (158 mL)
  • 2 unpeeled oranges (medium sized)
  • 1 tsp baking powder (5 mL)
  • 1 tsp ceylon cinnamon (5 mL)
  • a pinch of salt

Orange almond cake
Instructions
  1. Wash oranges and simmer in water for 2 hours (or until the oranges are very soft).
  2. Cool oranges, then cut and remove all seeds.
  3. Preheat oven to 375 degrees F (190 C).
  4. Puree oranges in a food processor.
  5. Add almond flour, eggs, salt, sugar, baking powder and cinnamon to the mix.
  6. Pour batter into a greased 9″ round pan.
  7. Bake for 40 minutes or until a toothpick inserted comes out clean.
