My first ever homemade gluten-free cake, orange and almond cake!

Want to know what was my inspiration?

Well…..I discovered this cake while dining for lunch at Graze MCA in Sydney (see actual cake below). 99% of the time, I do not order dessert after an entree. But my meal was very light and felt like eating more. Glad I made that decision!

Never had this before and wondering it taste like? It’s moist, dense and has a nice flavor of orange. The texture is grainy because of the almonds.

For decoration and photography purposes, I made one cake with candied oranges and another with orange zest on top.

The recipe below is pretty straightforward. The only step that takes a while is cooking the oranges.

Ingredients
  • 1.5 cups homemade almond flour (355 mL)
  • 6 eggs
  • 2/3 cups turbinado sugar (158 mL)
  • 2 unpeeled oranges (medium sized)
  • 1 tsp baking powder (5 mL)
  • 1 tsp ceylon cinnamon (5 mL)
  • a pinch of salt

  • 1.5 cups homemade almond flour (355 mL)

Instructions
  1. Wash oranges and simmer in water for 2 hours (or until the oranges are very soft).
  2. Cool oranges, then cut and remove all seeds.
  3. Preheat oven to 375 degrees F (190 C).
  4. Puree oranges in a food processor.
  5. Add almond flour, eggs, salt, sugar, baking powder and cinnamon to the mix.
  6. Pour batter into a greased 9" round pan.
  7. Bake for 40 minutes or until a toothpick inserted comes out clean.

  • Less sugar was used than what the original recipe called for

  1. This cake looks divine, I should not have read this hungry! Will give it a go one of these days. I’m not much of a baker but how wrong can I get it when you’ve given such a straightforward recipe. Let’s see :o)
