Carrot Cake

Ingredients
  • 3 cups finely shredded carrots (710 mL)
  • 3/4 cup unsalted butter, at room temperature (177 mL)
  • 4 eggs
  • 1 cup turbinado sugar (237 mL)
  • 1 tsp vanilla extract (optional)
  • 2 cups spelt flour (473 mL)
  • 2 tsp baking soda (10 mL)
  • 1 tsp baking powder (5 mL)
  • 1/2 tsp salt (2.5 mL)
  • 2 tsp ceylon cinnamon (10 mL)

Instructions
  1. Hand grate 3 cups of carrots using a boxed or flat grater. (This can take up to 40 minutes.)
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Grease a 8 inch round pan.
  4. In a large bowl, beat together eggs, butter, sugar, and vanilla.
  5. Stir in shredded carrots and pour into greased pan.
  6. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let cool in pan for 30 minutes before serving.
Recipe Notes
  • Original recipe called for 2 cups of sugar. If you like your cake extra sweet, then you’ll need more than 1 cup.
  • Chocolate Frosting (for photography purposes): 90% chocolate, sugar, and cacao nibs. Cake must be cool before applying.
  • You can use coconut oil in place of butter.
  • You can try using a food processor to shred the carrots. I did try this, which was 1 out of 3 cups of shredded carrots. The pieces were bigger, but it doesn’t appear to affect the taste.
  • The eggs are locally grown by Sullivan Happy Heart Farm. The carrots are locally grown by Plant It Forward Farms.
  • The cake will still taste fresh in the fridge for a week when wrapped in foil.
